Our First Gluten-Free Cake

The day my daughter was diagnosed with gluten sensitivity, we immediately went to the store to buy a gluten-free cake mix.  I was determined to make this dietary transition as positive as possible for my little girl.  Surprisingly, there were many choices at the grocery store.  She made the selection, and we were off to our kitchen which now seemed more like a laboratory.  How would this taste?  Would there be life without gluten?  The answer is on my daughter's face above.  Yes!

The cake was delicious!  Better than an "all purpose flour" cake because we didn't feel sick after.  We weren't cranky or struggling with a restless tummy or inflamed skin.  We discussed the differences in taste and texture and were relieved with instant gratification of a tasty treat.
