Gluten-Free Meringue Ghosts

It's the day before Halloween, and I realize in the eleventh hour there is a school party tomorrow.  I'm an advocate for the kids with food allergies and sensitivities. (I always pause when I write or read "food sensitivity" because the symptoms caused by the food can be intense and deserve a stronger word than "sensitive"). In our school there are many foods that kids can't eat.  So, my goal is zero gluten, dairy, soy, and nuts.

A quick search on Pinterest for ideas, and I'm ready to make Meringue Ghosts for a fun twist.  I'm off to the kitchen to develop my recipe based on past experience and what I have in the pantry today, which might be a problem as I'm out of regular white sugar...

Our family now has a waffle iron!  No one is happier than our daughter.  This early morning while it was still dark and the autumn air chilled my face as I snuck out to get the paper, I decided it was time to make gluten-free & dairy-free waffles.  The recipe was simple and came out of a bag, Namaste Foods Waffle & Pancake Mix.  I made a few adjustments to the instructions.

Gluten & Lichen Planus Disease

Lichen Planus is a disease of the skin, it is associated with autoimmune and inflammatory conditions, and the cause is unknown.  My dad was diagnosed with Lichen Planus ten years ago.  His symptoms were raw sores on his scalp; and disintegrated fingernails and toenails that ultimately left only skin tips of his fingers and toes.  

A few years ago my dad removed gluten from his diet (subsequent to my gluten diagnosis).  Two months after he stopped eating gluten, his nails started growing back, and his scalp lesions began to heal.

I first learned about cross contamination many years ago while in culinary school and taking the food safety course.  Cross contamination is when the food you are working with becomes contaminated by another substance.  I took this seriously as a personal chef with raw meat.  And, as a pastry chef, I had to guard my workspace from the savory chefs.  They were always intruding into my area and cutting onions on my chocolate board!
